Rice, beans, pork and a little bit of herb

I’ve mentioned previously that I am not a fan of making things harder on myself.  Simplistic works.  I’m sure that I could make home made rice and beans – and it would be tasty.  And while this Covid-19 is going on, I’m not currently working.  But I will have to go back soon – I hope – and that means that I am back to making dinner on the quick side because of our work schedules.

So, tonight I made rice and beans with pork.  I cut up a couple of boneless pork chops and sautéed them in CannaCanola Oil.  Then I put a box of a well known rice and beans meal – the brand name begins with a Z.  You get it.  As I used a large box, I basically followed the directions on the preparation but for the amount of water I used.  Because I made everything in my InstantPot, I made an allowance that liquid would not be lost as it would be in a regular pot.

Instead of four and a half cups of water, four cups of water, two tablespoons of infused butter.  Stirred it around, closed up the InstantPot, set it on “chili”.  And went back to continue watching tv.

Half hour later, it beeped.  I let it natural release (those who own an InstantPot know what that means).  When it was done releasing, opened the pot, spooned into bowls and yum!!  I only wish I had the forethought to have gotten corn bread mix and made cornbread.  I feel like that would have made it perfect.  Especially with some Cannabudder on some  nice hot cornbread.  Mmmmmm!!!  Next time.
