Roasted-Get-Me-Toasted Veggies

So, like almost all home cooks, I am fascinated by kitchen gadgets. I have a bad case of gadget-envy. The latest object of my obsession: air fryers.

Money being tight means improv. While salivating over the $200+ air fryers, my toaster decided that it should start shooting flames. Good bye toaster.

I headed to my local Walmart and got a $40 Black & Decker toaster/oven/air fryer. Not the Emeril Legasse one, but, beggars and all.

So, when I put my pot roast into the Pressure Cooker, I decided to do something a little different for the taters and carrots. I decided to roast them in the air fryer. Commence chopping.

So, I tossed my carrots and taters in a little bit of vegetable oil, and added some Italian spices, pink salt, pepper and about a quarter teaspoon of activated/decarbed flower. And air fried them for about 25 minutes.

Paired with a pot roast prepared in the pressure cooker and some onion gravy! Mmmmmm
