This one is gonna be fun. And I think it will translate well into the vegetarian realm. The vegan category, I’m not sure about about. If any vegans out there come across this, please comment.
I was floating around Pinterest when I happened on a recipe for meaty cornbread casserole, which kinda got me to thinking — mostly because there was an embedded video that showed the meat with cheese. And damn! I do love me some hamburger meat with ooey-gooey cheddar. This recipe uses the baking mix from #ctpharma before. If you’re in a legal state, or a medical state, check out if your dispensary has a product like this. If they don’t, lobby the suppliers for that.
So, get yourself a box of Jiffy Cornbread mix, whisk in the baking mix, add wet ingredients, and prepare it according to the instructions to make cornbread. Ignore the muffin recipe on the box. Set the batter aside. This is where I am not sure about converting this to vegan, because there is a need for eggs.
Brown one pound of ground beef (or chicken or turkey or whatever meat substitute you have with a chopped onion. Add a packet of taco seasoning, and the requisite amount of water according to the package.
Throw in any veggies you might want. I used black beans, kidney beans, and corn. Then add in your cheddar. I used “Mexican style”. Two cups. Mix all that yummy stuff together.
In an 8×8 brownie pan, layer your cornbread mix and your cheesy-meaty goodness, starting with a very thin layer of cornbread batter, followed by about half of your meat mixture, then about half of your remaining cornbread mix, another layer of meat, another layer of cornbread batter. Toss on the top of the cornbread some jalapeños, black olives, a little more cheese. Toss it into the oven and bake according to the directions on the cornbread package. I tossed some jalapeños on the top, on one side. Due to stomach issues, I can’t eat them, but the spouse loves them.
